Asparagus, Eggs and French Dressing
serves 4
Ingredients
- 2 T red onion, fine chop
- 4 T red wine vinegar
- 4 ea eggs, hard-boiled, halved
- 12 oz asparagus, steamed
- 1/2 oz fresh tarragon
- 2 T Dijon mustard
- 6 T olive oil
Instructions
- Pickle the onion in the vinegar with some salt. Whisk together the mustard and olive oil, add the soaking vinegar from the onions, then season to taste.
- Plate the asparagus, then top with the eggs, onions, and tarragon. Dress, garnish with pepper, and serve.
