Asparagus, Eggs and French Dressing

  1. Pickle the onion in the vinegar with some salt. Whisk together the mustard and olive oil, add the soaking vinegar from the onions, then season to taste.
  2. Plate the asparagus, then top with the eggs, onions, and tarragon. Dress, garnish with pepper, and serve.
